Chia Seeds, my new love

I heard about Chia Seeds on the Dr Oz show last winter.    I found a big bag at Costco,  so decided to try them.  It has been a staple in my pantry ever since.     Mostly I use them in my salads,  I love the crunch it gives them.   They are also good in spaghetti sauce.   I make my own sauce and the chia seeds add a thickening to the finished product.   They are said to bring out the flavour of what ever you are cooking and that seems to be true.

This is a salad I eat many times a week,  whenever I am not sure what to make.     I love feta cheese, which also has many benefits.  It has Calcium, Vitamin B12, and also contains some  iron, folate and vitamin D.   Many years ago I worked in a Greek Restaurant,  and that is where I was introduced to Feta Cheese.   Growing up on a farm in Saskatchewan,  I had never heard of it before,  but once I tried it,  I was hooked.   So this salad has two of my favourite things,  Chia Seeds and Feta Cheese, if you try it, let me know how you like it!

Scrumptious Salad 


Romaine Lettuce 
Red Onion
Mini Cucumber 
Cherry Tomatoes
Feta Cheese

Topped with Oil and Balsamic Vinegar, sprinkle 1 tbsp of Chia Seeds

In the middle of making a banana loaf one day I realized I was short eggs.   I knew I had read, use chia gel to substitute for eggs,  so thank goodness for google,  I checked it out,  found a recipe and it worked perfectly!   When I do a lot of baking,  I often use chia gel to cut back on the eggs I am using.

I found it worked quite well,   it just had to be mixed up ahead of time. 

Chia Gel  can also be used for many things,  including cutting back on half your oil or butter in baking,  to thicken sauces or stews and it can be used in smoothies.   The gel will store in the refrigerator for up to 2 weeks.

November Already

How can it be almost the end of November?   Honestly,   I remember my grandma telling me that life just speeds up so fast the older you get,  but I didn't really believe her.   Sorry grandma!   You were so right.   The last year has flown by,   and I'm not sure how that happened.   I am posting a photo of my lilies this summer, they were so pretty,  and it makes me feel happy!

It has been a good year,  I am feeling good,   I was able to spend time with my friends and family and enjoy life,  so much more than I did,  the year previously.   Being ill with a chronic situation,  is so stressful, and even harder when you doctors tell you, "there is nothing wrong,  all the tests are normal". That is when it can be easy to become depressed and feel it is all in your head.  

I am so thankful with the support of my friends and my family, they helped me with finding different things to try to help myself.   I finally found relief with acupuncture,  diet change,  learning to listen to my body and not try to do things I wasn't physically capable of doing at the time.   That is a very important thing.   I know life throws things at us that need to be done,  but sometimes it is okay to say "No I can't do that right now."   As a mother,  a woman,  we often feel we need to always be doing things for others,  but if we get to the point it is harming us physically,  we need to step back  and take time for ourselves.    

I ran on fumes for three years, and felt more and more tired,  and I was getting sick all the time, until finally my body shut down, and I couldn't do anything.  Try not to let yourself get to that point,  look after yourself and your body,  your family, your friends will thank you.   If people don't understand you having to take time and not do something or go somewhere,  that is their problem not yours. 

Your truest friends will help you,  not hurt you.  

I am so blessed for what I have,  and thankful to all that have helped me.

food journaling and weight loss

Last year my husband and I decided we should lose some weight to feel better.   We found an eating challenge we were quite excited about,  and it recommended keeping a food journal to see what foods were affecting how you feel.    I did this a few years previously to figure out what foods were bothering me when I was feeling very ill,   but I had not thought about doing it for weight loss

It really helped us keep from mindlessly eating.   Knowing I had to write down that piece of food or drink that was going in my mouth often kept me from doing it.   With taking Skinny Fiber I don't feel hungry,  but sometimes it's easy to pop something in your mouth while cooking,  or baking,  or what ever.    Thinking about writing it down, made us more mindful of our decisions of food,  so we were able to eat healthier more easily.

I often use a notebook,   it's easy to keep track,  and I can make notes with recipe ideas etc.   But I do also have a printable page I found since sometimes that is easier to take along if you have to go out, than hauling a notebook!

How Many Carbs in Fruit?

We all know that fruit is good for you and in its natural state provides great health benefits. I am pretty sure that all of us are also aware of the “natural sugars” that fruit has in it. With sugars comes carbs. So, if you are trying to implementing a low-carb eating lifestyle, I thought it might be a good idea to take a look at the number of carbs in fruit.

I have listed the TOP TEN that are in the low carb category and provided information on why they are good for your health.

1. CASABA MELON

If you aren’t familiar with Casaba melon, it’s related to honeydew and cantaloupe, but is not as sweet or flavorful as other melons. It has a cucumber like flavor and is best served at room temperature.

A one cup serving of cubed casaba melon contains 9g net carbs (11g total carbs – 2g fiber). Casaba melons are an excellent source of vitamin C and potassium. They are also a good source of vitamin B6, which can reduce levels of homocysteine, a key risk factor for heart disease.

2. WATERMELON

A one cup serving of diced watermelon contains 10g net carbs (11g total carbs – 1g fiber). Watermelon is packed with vitamin A, vitamin C, beta-carotene, and lycopene, which has been shown to reduce the risk of several forms of cancer. It also contains citrulline, which our body needs to create arginine, an amino acid that has been shown to increase insulin sensitivity. 3. STRAWBERRIES

One cup of sliced strawberries contains 10g net carbs (13g total carbs – 3g fiber). Strawberries are loaded with phytonutrients, which makes them heart-protective, anti-cancer, and anti-inflammatory fruits. They contain elegiac acid, which may inhibit tumor growth. The anthocyanin found in strawberries blocks the pain and inflammation-causing compounds, COX-1 and COX-2.

4. CANTALOUPE

One cup of diced cantaloupe contains 14g net carbs (16g total carbs – 2g fiber). Cantaloupe is very high in potassium, vitamin A, and beta-carotene. Potassium is important for maintaining healthy blood pressure and may lower the risk of stroke. Vitamin A and beta-carotene are essential nutrients for good vision.

5. AVOCADO

One avocado contains 4g net carbs (17g total carbs – 13g fiber). Avocados are high in monosaturated fat, which actually helps lower cholesterol and has been linked to a lower risk of cancer and diabetes. Avocados are a good source of lutein, an antioxidant that helps your eyes and skin stay healthy. It also has a wide range of anti-inflammatory nutrients that may help prevent arthritis. They are high in fiber. One avocado has between 11 and 17 grams of fiber, which makes them great for blood sugar regulation.

6. BLACKBERRIES

One cup of blackberries contains 7g net carbs (15g total carbs – 8g fiber). Blackberries may inhibit metalloproteinese enzymes. When found in high amounts, these enzymes play a significant role in cancer development. Blackberries are also packed with polyphenols and anthocyanins, which can help prevent cancer and heart disease.

7. HONEYDEW MELON

One cup of diced honeydew melon contains 15g net carbs (16g total carbs – 1g fiber). Honeydew melon is a high volume fruit; meaning that for its weight, it contains a high amount of water, fiber, and air. It contains few calories but makes you feel full, so it’s good for weight loss. It is also an excellent source of potassium, which can lower blood pressure and the risk of heart disease and stroke.

8. GRAPEFRUIT

1/2 of a medium grapefruit contains 11g net carbs (13g total carbs – 2g fiber). Grapefruits are a great source of Vitamin C, which supports the immune system. The red and pink colors of grapefruit are from lycopene, an antioxidant that may have anti-tumor effects. Grapefruit also contains liminoids which prevent tumor growth. Pectin, a soluble fiber that may slow the progress of atherosclerosis and lower cholesterol, is also found in grapefruit.

9. ORANGES

One medium orange contains 12g net carbs (15g total carbs – 3g fiber). Oranges contain more than 170 cancer fighting phytochemicals and 60 flavonoids. This includes liminoids, which may fight cancer and lower cholesterol. They have a variety of heart-protecting nutrients, including blood pressure-lowering potassium, cholesterol-lowering pectin, and homocysteine-lowering folate. They’re also an excellent source of vitamin C.

10. PEACHES

One medium peach contains 13g net carbs (15g total carbs – 2g fiber). Peaches are a good source of calcium, potassium, beta-carotene, and vitamins C, K, and A. They also contain beta-cryptoxanthin, a carotenoid with some anti-cancer and anti-inflammatory properties.

Choose Happy

A friend of mine told me I could borrow this.   It really is how I try to live my life now.  From being positive to being kind to myself,  and not taking things personally.   Do your best,  but forgive yourself for not being perfect.   It is ok,  love yourself for who you are.

Be mindful of where are you are and what you do. The more you are able to live in the moment, the more you will be able to cherish the positive emotions and keep hold of them for longer.

Mother's Day in July

Life is busy.   With every one working,  it is sometimes very hard to all get together for a special occasion.    My son and his wife wanted to take me out to the Broadway Cafe for breakfast for Mother's Day this year.    With one thing and another,  it kept getting put off.

Today we went.  It was delicious,   and it was worth the wait!    It does not matter when you do things,  as long as you are able to do them.   Whether it be a day late,  a week late,  a month late.   It is the time spent together as a family,  and not the fact it was on a certain day.   The location does not really matter either,  when it comes to family time,  the food and drink no matter where you are;  it is being with your kids that is great, not what you are eating.   I would have been happy with having a cup of coffee at the local coffee shop,  it is the visiting that made the morning special.  Although I have to say the food was outstanding as usual!

Spending time with the ones you are the closest too.   The best feeling in the world.

Summer - Enjoy

When you live where there is snow for what seems to be six months of the year,  summer goes by,  much too quickly.

Take time to enjoy.  Sometimes it the days that there is nothing planned that is best day ever.   Last weekend was one of those days.

Last Saturday   Barry, my husband had work to do, as usual.   He has been working out of town during the week, so on the weekends is often playing catch up with the lawn, doing things for work, and he is so busy.

This day he had to go to his compound to load up some supplies for taking to work Monday when he left again for his week working away from home.  Usually I just stay home, but that day grabbed my gloves, and said I would come along and help. On the way we took a scenic  drive, wow is there water in a lot of places!   The rain that fell a month ago is still sitting in some areas.   I helped load a barrel and a half of cams (he has tried to explain what they are for, but I can't tell you back! ) spent time washing the truck, then we went for ice cream.  I bought,  and we toasted 36 years of marriage.  Our anniversary had been the previous Tuesday,  he was out of town,   but having an ice cream,  and just being together,   really meant a lot to me.    It wasn't anything big, but it was nice to be away from tv, computer, we had a great visit. I think maybe it is sign we won't kill each other when he can actually retire!

So I hope you are all having a wonderful summer,   and you can spend some special time,  with the people you care about the most.

Apples and Almond Butter a Nutritious Snack

On the days I have an early start and an early breakfast,  I often grab an apple and a Tbsp of almond butter for my morning snack.  On top of tasting delicious,  it really is nutritious, and filling.

My husband eats 3 to 4 apples per day, I cannot quite get to that amount,  but he also has very little tartar buildup.  Not sure if eating apples is the reason, but he never flosses,  I also do, and he gets his teeth cleaned once per four or five years.  When I think about that I should eat more apples and see if it helps me!

Apples are rich in important antioxidants, flavanoids and dietary fiber.   They contain Vitamin C, Vitamin B (ribolflavin thiamin and Vitamin B - 6) and also Plytonutrients (phytonutrients help protect the body from the detrimental effects of free radicals).   They also contain calcium, potassum and phosphorus.

They can potentially prevent dementia, reduce your risk of stroke, lower your bad cholesterol, reduce the risk of diabetes and ward of breast cancer (studies conducted by prominent Cornell researcher Rui Hai Liu)

Almond Butter also has many health benefits.   It contains  Calcium, Copper, Vitamin E, Magnesium, Healthy Fats and Fiber.

Because of the antioxidents, almond butter is good for the skin and our blood.  It can help improve our sleep, balance the blood sugar, help with weight control and is good for our heart because of the healthy fats it has.

As with everything in our diet if we can choose Organic, it is much healthier.   Enjoy your apple and almond butter, and know you are feeding your body good food!

Walk for MS

Our group on the MS Walk, 2014.  We woke up to a windy, rainy day.   Thank goodness for water proof rain coats!   As a team we raised just over $2300, we were very happy with that for a first year attempt.  We all want to take part again next year and have already recruited a couple more people to join us. 

After the walk they fed us Pizza, fruit and hot chocolate.

More than 800 people participated in the annual Walk for MS on April 29. The walk started at the Archibald Arena, with music from The North Saskatchewan Regiment Pipes and Drums, and moved along the riverbank.



It was wonderful walking for a good cause,  and spending time with friends and family.

Water

Water so important,  we need to really make sure we are getting enough.   My mom ended up in the hospital with dehydration, one day she got busy, and just didn't pay attention to her water intake.  She is making sure now to drink all day long.  I always did drink quite a bit of water,  so taking my skinny fiber tablets with lots of water wasn't too difficult for me.  I do find, to keep track,  I fill a big jug and keep it on the counter, and drink from that.  It is much easier to keep track of what my intake is. #water #drinkwater #healthy

It has been a good week.  Our walk for MS went well,  we raised over $2000.   Next year we plan to take part again.  The weather has turned for the better, and I have spent some time out side,  playing in the yard, and also going for walks.  I'm so happy spring is finally here!

MS Walk

Skinny Fiber - Molly's Story

I found like Molly,  Skinny Fiber helped with my cravings immensely.  It was a life saver.



Molly's Story - wtg!    "You know when they say "All you have to do to lose weight is consume less calories than you burn!" Yeah... easier said than done. My problem was that I KNEW what to do - I was educated! Doing it was a completely different issue! I was, quite literally, addicted to food.
Skinny Fiber was the answer for me for my junk food cravings. It was comical (but not funny!) how much I snacked. You know when they portray a fat person eating all the time? That was me. I "couldn't" stop, I felt powerless, and I had felt that way my entire life. I wondered what it meant to be "normal".
In comes Skinny Fiber and within 2 days I thought, "Woah, I feel different!" 9 months later and I haven't messed up once. I am a new person. I feel "normal". I feel so good!
Also, BIG part is drinking your water! I cannot stress that enough! Half of your bodyweight in ounces, so 200 pounds = 100 oz. A healthy body is a hydrated body!
Here's a side by side I posted yesterday. On the left I had already been on SF for a month and had lost like 20 pounds (but I don't really "count" it as I believe it was "gunk" weight). I've lost a total of 63 pounds! Woohoo! I started doing Zumba 4x per week at the beginning of March

Sunshine and a Kale Smoothie

Today was a wonderful day to be out for a walk.  The sun is shining, and it has finally warmed up.   I felt after Easter Weekend, I needed a day to eat/drink very healthy,  so I made a Kale Smoothie for Lunch.

Kale Smoothie  - 1/2 cup almond milk, 1/2 water,  2 cups kale,  3/4 cup raspberries, 1/4 cup strawberries
1 tbsp hemp hearts,  ice,  blend.   Any fruit can be added, and also ground flax seeds.

Skinny Fiber - Melanie's Story

My name is Melanie and this is my Skinny fiber Story.
Sorry about the “before” picture, I had a better one but my computer crashed and I lost all my pictures. So, this first one was taken at Christmas last year. I have always hated my picture taken yikes lol  Oh well. 
I have been on a perpetual diet my whole adult life and have lost weight on every one of them. Who hasn't? The thing is. I could never keep it off. So I started the life of the YOYO dieter. You may have heard of this life style, lol up down, up down, up down……. I have been up to 192 lb. and as low as 103 lb. but I could never maintain my lower weight, and the older I got the harder it was. 
I saw an ad in November for Skinny Fiber on FB.
Me not being a patient kind of gal, I messaged the person selling the SF and asked her if it was possible to get a bottle from her because I wanted to try it right away. She actually met up with me and I got my first bottle of Skinny Fiber (thank you Carrie)  within 3 days after taking the SF I noticed I was not hungry!! I hadn't snacked in the evening (my worse time of day) either! Yay  That was the end of November and now it’s April and I’m down 20 LB.!!!! That was my goal!!!! I went from a 12/14 to a 6/8. Now that's what I'm talking about!! Love it! I will never be without it again. As I said I have struggled with my weight most of my adult life. I have been on every diet out there and have taken every diet product known to man! (not kidding).
I've tried Weight Watchers, Jenny Craig, Soup Diet, Prescription Drugs, Supplements, Starvation (I once went 35 days with no food!!!), HCG, Sensa, Low Carb etc. etc. etc. I have spent thousands of dollars and gained and lost hundreds of pounds over the years. Over the past couple of years I lost 25 lb gained a few of them back then lost some more…. you know the story, but I just couldn't get rid of this last 20!!!
With Skinny Fiber I didn't change the way I ate either! I have been a low carb eater for about 8 years. I had a phobia about eating carbs lol I find that now, if I want a something I just have it, I’m not scared that I’ll gain weight if I have “A chocolate!” or “A piece of Pizza!” I can control what I eat because I’m not Starving!!! It’s so easy to maintain my weight with SF. Because I feel full!! I don’t crave sweets or junk all the time!! I don’t do a lot of exercise either, because of a bad accident I was in a few years back.
I love Skinny Fiber so much I became a Distributor!!! I want everyone who has experienced what I have, to be able to lose that weight! I have missed out on sooo many things because of my weight issues and have cried many a tear too. If you have been there, done that and are sick of the same ole same ole…why not give Skinny Fiber a try???? What Do You have To Lose??? Except that extra weight!!!!

My Morning Walk

I went for a walk this morning.  I had misplaced my earphones as usual,  and was meeting some one,  so had to leave before finding them, I didn't want to be late.  I was glad as it turned out, just to have a different experience.  Walking while listening to music, is much different that walking and just hearing the sounds around you.   The swish of the traffic.  There is more traffic now that there us to be at 9:00 am.  The sounds of the birds,  Crows, Robins,  and a couple I couldn't identify.  My husband could have, he is an expert.  Or at least he pretends to be, and I believe him!.   I was able to say good morning to a couple people I met on the sidewalk, and actually hear their reply.  Sometimes just being without the distraction of the playlist,  much as I enjoy walking with it,  is a nice place to be.  I have found my earphones though,  tomorrow will walk faster while listening to my music.

Family

I am very blessed to have my family close to me.  They were so understanding and there for me when I was going through my health issues.   Even though some days, I really didn't feel like talking,  it was important to keep connected with people,  it would have been easy to slip into a depression other wise I think.   So if I learned anything from being sick, it was to let people help me through the bad times,  the ones that insist really want to do it.

Start the Morning with Warm Lemon Water

One of the first things I started doing after talking with my acupuncturist was to start having a glass of lemon water every morning.  She told me it would help with my PH levels, since my system was quite acidic and warm lemon water would have an alkalizing effect on the body.  After doing some reading  drinking this also helped with digestion, cleans out toxins, with many other things. A little bit about me

My name is Laureen, and I have spent the last five years, trying to get healthy.  I was off work for over a year,  according to doctors and medical tests, there was nothing wrong with me, and yet I was sick,  had no energy and was at my wits end trying to figure out for myself what was happening.  I had put on a lot of weight in the early part of 2000's.

I finally started getting results, by visiting a Homeopathic Doctor and an Acupuncturist, that studied Chinese Medicine.  Between these two, we identified,  adrenal issues,  sleep apnea, hormonal problems and thyroid issues.   (all those tests came back normal with main stream medicine)  With acupuncture,  diet changes,  meditation and herbal remedies,  I slowly was getting back to good health.

Six months ago I found Skinny Fiber.  It has put -me over the top in feeling good.   I have lost 12 pounds, and numerous inches.   With all my health issues,  it is taking time,  but slowly I am losing weight, and feeling much better.

I would love to share some of what I learned with you here.    I also want to learn from any of you that are going through issues with their health,  and find out what you are doing to cope.
